Did everyone have a fabulous day yesterday? I can NOT believe the insanely beautiful weather that miraculously happened to New Jersey yesterday. It was warm! It was beautiful! What a day for the Super Bowl! People got to ENJOY sitting in the only stadium in the North to host the Super Bowl that doesn’t have a dome…no frost bite…
On the other hand, the beautiful weather meant that Punxsutawney Phil saw his shadow, predicting six more weeks of winter. Boy, he wasn’t kidding. We woke up this morning to a snowy winter wonderland outside our door and have been housebound all day. No school. The roads were only plowed at noon for the first time. It’s madness.
Here, I was all excited for a day to recover from hosting an epic, awesome Super Bowl party…Momma gets no break. The ladies were off from school and I had to chuck all my plans out the window. Trying to have a conference call while two little monkeys jump on top of me…not so easy. I bow down to those who work from home with children present. That is no easy feat.
Anyway, I want to share some highlights from our Super Bowl party. We had a ton of food and lots of fun…
Here’s the menu:
Cheese board with baguette
Chips with guac and salsa
Pita with hummus
Pigs in blankets
Vegetarian spring rolls
Fresh mozzarella with roasted peppers, basil and balsamic dressing
Pulled BBQ chicken with various rolls
Slaws – cole, German and Asian
Middle eastern condiments – Labane, Tehini, Israeli pickles, pickled beets, Israeli salad
French fries – plain and with truffle salt
Salmon with rosemary and lemon
Broccoli with garlic
Chocolate chip cookies
Bread pudding with oozing chocolate centers
Salted caramel pie
Ice cream for the kids
It was entirely too much food for the group we hosted, but we happily sent everyone home with takeout bags!
I’ll be posting some recipes this week. Leave a comment if you would like any particular recipe so I make sure to post what people like.
Hope your week is off to a good start!
