Easy Summer Recipe: Linguine with Clams

One of Bella’s favorite meals is spaghetti with clams. When we go to Patsy’s, we order the entree and she ends up eating 95% of the dish. I rarely get to eat even one clam!

So, I was at Fairway and saw these beautiful cherrystone clams. I got 2 dozen. As soon as Bella got back from her swim lesson, she was famished. So, I quickly whipped up her dinner. This is such an easy recipe!

First, cook your pasta. I chose a linguine, but you can certainly use spaghetti or angel hair pasta or any other noodle that you desire.

In a pan or pot, put 2 tablespoons of olive oil. Thinly slice up 5 cloves of garlic and add to the oil. When the garlic becomes fragrant, add the clams. Chop up some parsley (as much or as little as you and your family like). I like a tablespoon or two of chopped parsley…Then, add a cup of white wine or beer. Don’t worry, the alcohol completely cooks out of it. You won’t be getting your little one drunk on this dish! Cover the pan with a lid and let the clams cook until they open (about 8 minutes). Add your al dente pasta to the pan and mix everything together. Salt and pepper to taste. Discard any clams that did not open – they aren’t good. Serve it up!
